Ce couvent a été reconstruit sur les ruines d'une abbaye bénédictine fondée en 815 à l'époque carolingienne et dédiée alors à SAINT JEAN-BAPTISTE. Cette abbaye avait joué un rôle très important sur la communauté villageoise tout au long du Moyen-âge, et sous l'Ancien régime. Puis en partie détruite après la Révolution de 1789, on y a rebâti ces beaux bâtiments, aujourd'hui devenu une maison de retraite des Soeurs SAINT-VINCENT DE PAUL.
Situé dès l'origine au confluent des 2 rivières qui descendent de la Montagne toute proche, la communauté religieuse y travaillait les terres fertiles, riches en alluvion, déjà exploitaient à l'époque gallo-romaine. Beaucoup d'oliviers y croissaient et c'est pour cela que le village a pris le nom de MONTOULIOU, ou mont des oliviers, au fil du temps. Ce nom est attesté dès 1146 dans un document issu de la vicomté de Carcassonne.
Cette abbaye fût donc l'élément fondateur et organisateur du village qui s'est développé aux alentours et qui s'est regroupé plus tard autour de l'église sur les hauteurs rocheuses, pour bénéficier des fortifications et des gorges qui protégeaient les villageois. Ces avantages naturels ont bien protégé les habitants lors de la croisade des Albigeois, de la guerre de Cent ans, puis des guerres de religion... Mais l'abbaye fût quant à elle souvent pillée et ravagée lors de ces époques troublées. Ce couvent est donc bâti sur un lieu chargé d'histoire et de vestiges, comme l'ont montré de récentes fouilles archéologiques...
